RECIPE for 🍅 @madrosefoods Corbarino Tomato-Poached Cod with Herbs & Crispy Shallots 1⁄4 cup olive oil 4 garlic cloves, thinly sliced 1 small shallot, thinly sliced 1 jar @madrosefoods Corbarino cherry tomatoes (drained) 1 cup fresh cherry tomatoes, halved Kosher salt + black pepper 1-2 tsp fish sauce (to taste) 11⁄4 lbs cod, cut into 4 1 cup cilantro (leaves + stems) 1⁄2 cup mint (leaves + stems) 1⁄4 cup basil, torn Korean chile threads + fresh lime (for topping) Steamed rice (for serving) Heat olive oil in a skillet over medium high heat. Add garlic + shallot, cook until golden. Set aside all but 1 tbsp of the shallot/garlic oil. Add both tomatoes, season w/ salt + pepper. Cook 5–8 min until saucy. Stir in fish sauce + 11⁄2 cups water. Simmer 3–5 min. Season fish, nestle into sauce. Cover + poach 4–6 min. Top w/ reserved shallot oil, herbs, chile threads, and lime. Serve over steamed rice.
