Jay & Joy Corn Fritters & Cheese Bites/ with @bettinas_kitchen & @jayandjoymarket This is a great finger food idea, or starter that is super simple to prepare. You can make the fritters ahead of time and assemble just before serving. These miniscule sweetcorn fritters are so cute and a great little mouthful of deliciousness. For the toppings, I’m using my ever faithful pumpkin seed pesto recipe which is a staple in my fridge, along with my absolute favourite plant cheese @jayandjoymarket Jean Jaques, which is a plant based version of washed rind cheese - you have to try this to believe it! Makes 12-15 bites For the Corn Fritters: 40g buckwheat flour 30g plain gluten free flour 90ml plant milk 1⁄2 tsp apple cider vinegar 1⁄4 tsp bicarbonate of soda 1⁄4 tsp baking soda 3 tbsp sweetcorn salt and pepper, to taste olive oil, for frying For the Topping: 3-4 tbsp pumpkin seed pesto (recipe below) 1 pack of Jay & Joy Jean Jaques plant cheese, thinly sliced handful of microgreens drizzle of balsamic vinegar For the Pumpkin Seed Pesto (makes 1 jar): 250ml olive oil, plus extra for sealing 120g pumpkin seeds 1 bunch of basil (30g) 1 garlic clove, peeled 1/2 tbsp each salt and black pepper Method: Mix all the ingredients for the blinis together (except the olive oil) in a bowl until well combined. Heat some olive oil in a frying pan, then drop spoonfuls of the blini mixture into the pan to make little, round, bite-size pancakes and cook on both sides until golden brown. When bubbles appear in the batter, this is usually a sign they are ready to turn over. Remove and set aside to cool. Make the pumpkin seed pesto by adding all ingredients to a blender and blitz until combined. The length of time to blitz depends on whether you prefer your pesto smooth or with some texture. Set 3-4 tbsp pesto aside and decant the rest into a jar, cover with a layer of olive oil to preserve and keep in the fridge to use for other dishes. Place the fritters on a serving platter and top each one with 1⁄2 tsp pumpkin seed pesto, then add a small slice of cheese on each. #ad #vegancheese #fingerfood #easyrecipes
