Sam @samontherockz , our global Discarded Ambassador, is here to show you a fantastic zero-waste technique to give white wine that is past its peak, or flat sparkling wine, a second wind as an utterly delicious Zero Waste Dry Vermouth. Which we think is the perfect accompaniment to our award-winning Discarded Grape Skin Vodka in a lusciously Chardonnay-forward Grape Skin Martini.
Because you are making this vermouth yourself, you can add different botanicals to experiment with different flavours – and making something totally unique!
Incredibly simple to make, this involves adding a little bit of spirit, and then infusing it with botanicals for three days, before straining them out.
Ingredients:
-300ml oxidized white or rose wine
-1 orange peel
-1 tsp Cardamom Seeds
-1/2 tsp fennel seeds
-1 tsp coriander seeds
-1 bay leaf
-1 wormwood leaf (totally optional)
-50ml Brandy (or any other white or brown spirit you have in the back of the cupboard)
Method:
-Add ingredients together in a non-reactive container
-Stir, cover and leave for three days
-Strain and bottle – will last for 4 weeks in the fridge
-Grape Skin Martini
Ingredients:
-50ml Discarded Grape Skin Vodka
-20ml Zero Waste Dry Vermouth
-Method: Stir over ice until ice cold, then strain into coupe and serve.
