Easy Vegan Cinnamon Streusel Banana Bread 🍌🍰 Light fluffy and moreish cinnamon banana bread with a cinnamon sugar crunch swirl, cinnamon streusel top and icing - who wants a slice? . I’m back to posting recipes today but want to express how deeply the loss of our queen has been felt all over the world and how much we appreciate her for all that she has done for us 👑 thank you . AND so this month’s banana bread is truly a DELICIOUS ONE (maybe the best one yet!!) it’s simple, nostalgic and so warming packed with cinnamon spices, a sugary cinnamon crunch and the best cinnamon streusel top 🥰 . Plus, it’s vegan, gluten-free and made with good-for-you ingredients! . Here’s the recipe to SAVE for a cosy Sunday bake 👆🏻 . Cinnamon Streusel Banana Bread 🍌🍰 ⭐︎mash 400g ripe banana (3-4 bananas but please weigh!) + stir 75g coconut sugar + 2 tbsp light olive oil + 60g smooth almond butter + 45g @cocosorganic_ yoghurt + 1 tbsp lemon juice + 1 tsp vanilla essence till smooth ⭐︎sift in 210g plain/GF flour + 25g @macr0mike vanilla buttercream protein + 1 1/2 tsp baking powder + 1/2 tsp bicarbonate of soda + 1 tsp cinnamon + pinch of salt + whisk to a thick smooth batter ⭐︎pour half into a lined loaf tin. Sprinkle with cinnamon sugar (30g coconut sugar + 1 tsp cinnamon) ⭐︎top with the rest of the batter. Sprinkle over the streusel (35g flour + 30g coconut/brown sugar + 1/2 tsp cinnamon + 30g coconut oil/vegan butter stirred in) ⭐︎bake at 160Fan/180*C for 50-55 mins (cover with foil if it’s browning too much) till an inserted skewer comes out basically clean ⭐︎cool for 10 mins then lift out to cool fully ⭐︎drizzle liberally with icing sugar glaze ⭐︎cut yourself a BIG SLICE and DIVE INTO this banana bread .
