Your new favorite pasta: Spicy Gochujang Rigatoni Alla Vodka (recipe below!) 🍅 Ingredients - 2 tbsp olive oil - 1 onion, finely diced - 4 cloves garlic, minced - 1-14.5 oz. tube tomato paste - 2 tbsp gochujang paste - 1⁄4 tsp red pepper flakes (if you want spicier) - 2 oz. vodka - 3⁄4 cup heavy cream - 16 oz. rigatoni - 2 tbsp unsalted butter - 4 oz. Parmesan cheese, grated, divided - Kosher salt - Black pepper Preparation 1. Bring a pot of heavily salted water to a boil. 2. Heat olive oil in a large heavy-bottomed pot over medium-high heat. Cook onions and garlic until softened and the edges of the onions begin to brown, 5 to 7 minutes. Season with salt. 3. Add gochujang, tomato paste, and red pepper flakes (if using) to the pot. Cook, stirring often, until the paste turns a dark rust color, 5 to 6 mins. Deglaze the pot with the vodka, scraping the bottom of the pot to release any brown bits. Reduce heat to low, add heavy cream and mix to combine, turn off heat. 4. Meanwhile, cook the rigatoni until very al dente.Transfer pasta straight into the sauce and reserve 1 cup pasta water. Add butter and 1⁄2 cup pasta water to pot and mix until incorporated. Adding a little at a time, mix in 3 ounces of Parmesan, stirring constantly, until cheese is has melted and sauce looks glossy. Add more pasta water, 1 tablespoon at a time to loosen sauce if needed. 5.
