🍊 Vegan Blood Orange Cake 🍊 Technically blood orange, almond, olive oil & cardamon cake 😍I made for @nushcope ❤️ Ingredients: Top 1 blood orange, sliced Juice of half a blood orange 2 tbsp sugar Dry 200g plain flour 50g almond flour 1/2 tsp baking soda 1 tsp baking powder 1 tsp ground cardamon Pinch of salt Wet 70ml Olive oil 150ml plant milk 170g sugar Zest from 1 orange Zest from 1 lemon Juice from 1 orange 1 tsp white vinegar Method Preheat the oven to 180C Make a syrup with half juice of blood orange and sugar, mix till sugar dissolved. Grease the cake tin and line the base with a disc of baking paper Pour sugar into the bottom of the tin then cover and decorate with THIN slices of blood oranges. Place dry ingredients in one bowl and wet in another bowl. Pour wet into dry, mix carefully - don’t over mix! Pour into lined baking tray and place in preheated oven for 35 mins this can take longer depending on your oven so continue to check with a knife to make sure the middle is cooked! Shouldn’t take longer than 50mins. Leave the cake to cool until room temp before removing from the tin and serving. Things to check for; You don’t want a super wet batter, if anything a bit less than my video but not more wet! Use unwaxed fruit skins or wash off wax with hot water Place cake tin on baking tray so the syrup doesn’t drip into the oven Don’t flip while cake is still hot!
