Creamy gf/df shrimp pastaπŸπŸ€πŸ…πŸ‹ Recipe: 212g dry pasta (I used Rummo gf pasta from Whole Foods) 10 oz frozen wild caught shrimp 1/2 cup reduced fat canned coconut milk 1/2 lemon, juiced 1-2 cloves garlic 1 cup cherry tomatoes 1/2 cup marinated artichokes 1/4 cup capers 2 tbsp sundried tomatoes Avocado oil spray Seasonings- I used a Greek seasoning mix, paprika and Garlic & Herb Mrs Dash and parsley flakes First cook your pasta 1-2 mins less than the package says. Mine said to cook for 10 mins, I cooked for 9 mins and strained, and saved a couple tbsp of the pasta water as well to add back in at the end. Next, spray your pan with some avocado oil. Add the thawed frozen shrimp to your pan and season generously. Once cooked, remove from the pan and set aside. Add in the coconut milk, lemon juice, minced garlic, cherry tomatoes, artichokes, capers and sundried tomatoes. Bring to a light boil and burst the cherry tomatoes (if you like). Add back in the noodles, pasta water and shrimp. Stir to combine. Top with parsley flakes & serve.
