Congee has been a HIGHLY requested recipe and I'm super excited to share my family's recipe and how my grandmother made it for me! It's one of my go to comfort foods and is so delicious and easy to make. It's extremely customizable and I love adding all the toppings exactly how I like them :)
She would always use a high quality chicken broth, which is why I'm making mine with @kettleandfire’s Organic Chicken Broth. It adds a ton of depth and flavor to the simple rice porridge, and also saves me tons of time from making my own! 1 cup medium grain or short grain rice (200g)
10 cups @kettleandfire Organic Chicken Broth
1 tbsp shaoxing wine
2 tsp sesame oil
1/2 tsp msg
4 pieces dried scallop (optional)
kosher salt and white pepper, to taste
Garnish:
scallions
ginger
crispy wonton strips
white pepper
century egg (preserved duck egg)
1. Rinse and wash rice until the water runs clear.
2. In a large pot, add @kettleandfire Organic Chicken Broth, shaoxing wine, sesame oil, msg and dried scallop pieces. Bring to a boil then add the washed rice.
3. Lower the heat to medium low to bring to a simmer and cover. Simmer for 45 minutes to 1 hour, stirring occasionally until the desired consistency is achieved and the rice is broken down. If too thick, add more broth and continue simmering until the preferred congee thickness is achieved. Season with white pepper and salt to taste.
4. Garnish with a century egg, chopped scallions, crispy wonton strips, white pepper, thinly sliced ginger and enjoy!
