I was skeptical but these turn out amazing! Dough: 2 cups mashed white sweet potatoes (about 2 medium potatoes) 2/3 cup cassava flour 2 tbsp monk fruit, stevia, or coconut sugar 1 1/2 tsp vanilla + pinch of sea salt Filling: 5 tbsp melted coconut oil, avocado oil, or vegan butter 1/4 cup + 1 tbsp coconut sugar 1 1/2 tbsp cinnamon Peel & cube the sweet potatoes. Add to a pot of boiling water & cook until super tender. Drain & place in a food processor. Process until they’ve broken down, then add the remaining ingredients. Spread dough onto parchment paper & roll into rectangle. Mix together the filling ingredients & spread over the dough. Use the paper to help roll the dough into a log & cut into slices. Spray a muffin tin & place a piece in each crevice. Bake at 375f for 18-22 mins until slightly golden & firm to touch.
