these are so good & versatile so you can make them using whatever you have on hand! tofu Pattie’s: cut the tofu into circles our squares depending on if you’re using English muffins or bread. Spray them with oil or drizzle oil over them. Rub your seasonings (i used nutritional yeast, sea salt & pepper, & garlic) into both sides & place on a pan over medium heat. Cook on both sides until golden and crisp to your liking. You can also air fry them to your liking! Pesto aioli: 2 tbsp pesto + 1 tbsp avocado oil mayonnaise (i like @primalkitchenfoods) Toast your bread & melt your fave cheese on one side (i used @violife_foods). Add tomato, avocado, greens, & the aioli.
