FLUFFY JAPANESE PANCAKES
If I’m being honest, there is just something sooo satisfying about cutting into a plate of fluffy pancakes 😌
These are extra fluffy, soft, and topped with the best warming toppings 🤌 I can’t even explain it, these are just a dream ☁️

#Recipe Details:
Ingredients:
- 1 egg yolk
- 1 tbsp sugar
- 2 tbsp almond milk
- 3 tbsp flour
- 1/4 tsp baking powder
- 2 egg whites
- 1/8 tsp cream of tartar
- 1 1.2 tbsp sugar
Topping:
- Warm berries
- Powdered sugar
- Maple Syrup
Instructions:
In a small bowl, whisk the egg yolk with the sugar. Then, add in the almond milk and whisk until combined.
Sift together the flour and baking powder over the yolk mixture.
Whip together the egg whites and cream of tartar. Add in the sugar and continue to whip until white and frothy (be careful not to over whip, we don’t want stiff peaks here).
Whisk about 1/3 of the egg white mixture into the yolk mixture.
Then mix in another 1/3.
Finally, add the yolk mixture to the rest of the egg whites, and whisk until well combined, but be careful not to deflate.
Heat a skillet over low heat, and spread a little bit of coconut oil on top to lightly grease.
Pour about 1/4 cup of the batter onto the pan for each pancake. Cover and let cook for 4-5 minutes.
Pour another 1/4 cup on top of each pancake. Cover again, and cook for another 4-5 minutes.
Then, carefully flip and cover, and allow to cook for the last 4-5 minutes.
Remove the pancakes from the stove and top with warm berries, powdered sugar, maple syrup and/or any other desired toppings.
