Spinach Artichoke Baked Salmon 🧡
Ingredients:
4 salmon filets, skin on or off
sea salt
1/2 teaspoon paprika
1 tablespoon olive oil
3 tablespoons salted butter
1 small shallot, sliced
2 cloves garlic, smashed
1/2 teaspoon crushed red pepper flakes
1 1/4 cups heavy cream
3 ounces cream cheese
1/2 cup grated parmesan or manchego cheese
3 cups baby spinach, fresh and chopped
1 (12 ounce) jar roasted/marinated artichokes, roughly chopped
juice from 1/2 a lemon
zest from lemon for garnish
Preheat oven to 350°. Season salmon with salt and paprika. Heat olive oil in large cast iron and sear the salmon on one side. If leaving skin on salmon, sear the skin, remove from pan and set aside.
To the same skillet, add butter, shallots and garlic. Cook just until you can smell the garlic, about 2 minutes. Add the red pepper flakes, heavy cream, and cream cheese. Stir and bring to a simmer over medium heat. Season with salt and pepper. Add the parmesan, spinach and artichokes. Cook for a couple minutes until sauce is creamy and spinach is wilted. Stir in lemon juice.
Add salmon back into the pan and bake in the oven for 10-12 minutes until salmon is cooked through. Garnish with micro greens and lemon zest.
