Decadent and packs the perfect touch of espresso in every bite 🤤 In my opinion – it could not get more perfect than this 🤍 #Recipe Details: Oat Crumble: - 1 cup butter - 1⁄2 cup coconut sugar - 1 tsp vanilla extract - 3 cups rolled oats Espresso Chocolate Collagen Peptides Mousse: - 4 eggs - 2 tbsp cornstarch - 1 1⁄2 cups full fat coconut milk - 1⁄3 cup maple syrup - 2 tsp instant coffee or espresso powder - 2 tsp vanilla extract - 1 pinch sea salt - 1 3⁄4 cups semi-sweet or dark chocolate chips - 2 scoops @vitalproteins Chocolate Collagen Peptides Instructions: Line a 8” square baking pan with parchment paper; set aside.
In a saucepan over medium heat, melt and mix together the butter and coconut sugar. Stir in the vanilla, and then mix in the oats.
Pour half of the oat mixture into the prepared baking pan, spread evenly & press down. Reserve the other half. Place in the fridge while making the mousse layer.
To make the espresso chocolate mousse layer, separate the egg yolks from the whites. Place the yolks in a medium pot, save the egg whites for later. 
To the yolks, whisk in the cornstarch. Then, add in the coconut milk, maple syrup, and instant coffee. Bring the mixture to a simmer on medium heat.
Cook while stirring continuously, until the mixture thickens and has a pudding-like texture. Remove from the heat. Add the chocolate chips and chocolate collagen peptides. Mix until the chocolate is melted. Stir in the vanilla and sea salt.
In a mixing bowl, whip the egg whites until stiff peaks form. Gently fold the chocolate mix into the whipped egg whites.
Pour the mousse layer on top of the prepared oat layer. Top with the remaining oat crumble mixture.
Refrigerate for at least 2 hours, until set. Enjoy! #VitalPartner #WellnessIsVital
