UPDATE: I was sold the wrong size crown cap so I won’t be able to bottle till I get the correct size. The tank is cold crashed for the time being to halt fermentation. I’ll keep y’all posted! Here’s the thing with pet nat- Timing the bottling date is HARD! I’m watching the sugared drop S L O W L Y on the 2022 Dreams cuvée. We’re hanging at 20g/L residual sugar and I want to bottle at 12-14. So, it could be tomorrow. It could be Tuesday! It might even be Wednesday.
