When chef Will Fincher started putting together the menu for The Longboard on Sullivan’s Island, he pulled inspiration from both South Carolina’s Low country cuisine and the concept’s sister restaurants in the US Virgin Islands. “I went down to the Virgin Islands every other week for about four months, so I was there quite a lot,” he says. “I also filled some gaps whenever their chef or a line cook was out of town. Then we did a lot of menu research and development.
