Stuffed onion petals - my absolute favourite form gemista! Who is missing the sunshine? Come on a pretend trip to Cyprus/ Greece with me... this dish is instant sunshine good vibes. I bang on about Gemista but they are so accessible and sweet and delicious and I (controversially!) prefer them to koupepia aka stuffed vine leaves. You can stuff tomatoes, courgettes, peppers, but onion petals are my favourite. I love the texture and sweetness. Everyday, store cupboard ingredients. VEGAN. Easy... the most taxing part is that you have to boil the onions and leave them to cook, hardly taxing you just need to be a bit organised. I did those this morning then stuffed them this Arvo. Popped the dish in the oven before I left for the school run and the were ready for the girls when they got home. Dollop of tangy @timsdairyyogurt Cypriot yoghurt and jobs a good ‘un.
