grilled veggies on a toasted sammy >> just toast your fave bread (i usually use paleo bread for higher protein/fiber but this sourdough was 🤌). Toss the veggies in olive oil & sea salt & pepper. Grill or bake until tender. Add some hummus &/or mayo to the sliced. Add the grilled veggies, avocado, & some greens. Add a slice of vegan cheess (i love @Violife). Place back on the grill or a pan for a few until the cheese is melty.
