Il tempo in vendemmia è un fattore chiave. I tempi dell’uomo devono allinearsi con i tempi della natura e della vigna, ci sono momenti in cui c’è da andare veloce e altri in cui si deve pazientare e attendere, anche pochi giorni fanno la differenza. A Dievole quest’anno siamo partiti un po’ prima ma poi ci siamo fermati: le uve sono sane, non c’è da avere fretta, con un occhio al meteo e uno alla vigna aspettiamo che le temperature siano un po’ più basse, sopratutto di notte. Questo permetterà agli acini d’uva sviluppare ancora di più i profumi, per una maggiore qualità. . Time in harvest is a key factor.
