Mother’s Day is coming up and if your mom is an egg fiend like mine, this migas breakfast casserole is worth a try! Recipe below, and there’s a ton more brunch ideas in my latest newsletter 🤍 Migas Casserole - 1/4 cup neutral oil - Roughly 8oz of tortilla chips - 1/2 large onion, diced - 2 jalapeños, diced and de-seeded - 1 tsp cumin - 1/2 tsp guajillo chili powder - Salt and pepper to taste - 1 or 2 roma tomatoes, chopped - 3 garlic cloves, minced - 10 eggs - 2 Tbsp half and half (or milk or cream) - 1 cup shredded cheddar cheese - 1 cup shredded Monterey Jack cheese Preheat the oven to 350 degrees. In a large skillet over low heat, add the neutral oil, and allow it to heat up for a moment. Take the tortilla chips, and break them up slightly using your hands before dropping them in the skillet. Gently toss and toast the chips in the oil for about 5 minutes until they are slightly browned. Remove the chips from the skillet, and set aside. In the same skillet, increase the heat to medium, then add the diced onion and sauté for about 5 minutes until translucent. Add more oil to the pan if needed. Add the jalapeño, and continue to sauté for another 5-7 minutes or until the veggies are softened and slightly browned. Season with salt and pepper, then add the cumin and guajillo chili powder. Allow the spices to bloom for a minute or so. Add the diced tomatoes, and sauté for another minute or two, then turn the heat off. Grease a 9x13 baking dish, and then layer half of the chips in the bottom, Top with half of the sautéed veggies, and then a handful of each of the shredded cheeses. Repeat with the remaining chips and veggies, holding back some cheese for the top. Whisk together the eggs, and season with salt and pepper. Pour the eggs over the chips and veggies, making sure some of the chips are still sticking out of the top. Sprinkle over any remaining cheese. Bake at 350 for about 25 minutes, or just until the eggs are set. Broil for a minute or two right at the end.
