I PROMISE you dont taste sweet potato & they get so crisp & perfect 🥹 just trust me! Dough: •1/2 cup mashed sweet potato (i used Japanese sweet p’s) •1/2 cup almond flour •1/2 cup tapioca flour •Seasonings of choice (i used garlic, sea salt & pepper, oregano & nutritional yeast) •1 tbsp olive oil (or other oil) Filling: •Your fave pizza sauce or marinara •Cheese of Choice (i like @violife_foods) Peel & boil a small sweet potato until super tender. Let cool. Once cool, grab a 1/2 C measuring up & firmly pack the potato into it. Then add it to a food processor with the remaining dough ingredients. Process until dough forms. It shouldn’t be too sticky - if it is, add a tbsp of tapioca flour at a time until you can work with it. Roll the dough out (i use a second piece of parchment paper to place over top of the dough & rolling it that way so its less sticky). Use a mason jar lid or cookie cutter to cut out circles. Add some sauce to half of the circles & then a little cheese over top. Place the empty halves over top & use a fork to close the edges around them. Bake at 400f for 15ish mins, until golden (more or less time depending if you made them smaller/larger).
