Super easy chicken and broccoli dish for the kiddos! It’s quick, balanced and nutritious. They love it 😍 Ingredients: Boneless chicken breast (organic) Broccoli White Rice (I used jasmine here) Seasoning (adobo, soy sauce, onion powder, paprika powder) Directions: 1. In a small sauce pan, add salt to water and bring to a boil 2. Cut chicken breast into bite size pieces 3. Separate broccoli, blanch in boiling water for 2-3 minutes 4. In a wok or large pan, add 1/4 cup of water and some salt. Add in chicken once water simmers 5. Mix seasoning in to taste: soy sauce, adobo, onion powder and paprika (if want spicy add cayenne pepper) 6. Cover with lid until chicken is brown and cooked through. About 6-8 minutes. 7. In a small pot over medium-high heat, add 3 cups of water and adobo to taste. Add 1 1/2 cup rice and a splash of olive oil. Bring to a boil, then cover and reduce to a low simmer. Cook until rice is tender (about 15-18 minutes). Keep covered and off heat until ready to serve. 8. Top with some soy sauce!
