1 Cup Almond Flour 1⁄2 Cup Oat Flour 1 tsp Baking Powder 3 super ripe, Brown Bananas 2 Flax Eggs (2 Tbsp Flax + 6 Tbsp Water. Can sub real eggs) 1/3 Cup Maple Syrup 1 tsp Vanilla 1 tsp Cinnamon Pinch of sea salt Topping: 1/2 cup chopped walnuts 1/4 cup oats 2 tbsp coconut flour 1tsp cinnamon 1/4 cup melted coconut oil 1/3 cup monk fruit or coconut sugar Glaze (optional) Monk fruit powdered sugar (i like @lakanto) Plant milk, as needed to reach glaze consistency In a large bowl, mix together the fry ingredients. In a separate bowl, mash (or even blend) the banana until super mashed. Mix in the remaining wet ingredients, then add to the bowl with the dry. Mix well. Spread the dough into an 8x9 baking dish. Mix together the crumble ingredients. Sprinkle it over the bars - i like to gently press it into the top. Bake at 350f for 34-37 mins until a toothpick inserted comes out clean.
