Fide me to gala No music, just soothing gentle frying sounds this morning. Who has heard of this? It’s quite an unusual one, not a mainstream Cypriot dish that’s for sure! Id say fide is to Cypriots what porridge is to brits. It’s my mums favourite. Like a huge hug in the morning. It’s made with crushed vermicelli, cinnamon, milk and sugar and often nothing else. Simply fry crushed vermicelli in a little butter till golden then add a stick of cinnamon (a couple of cloves too if you like), milk and a little sugar. Bring to the boil then simmer on low until it is creamy and rich. Serve as is, or with a little more sugar and raisins, if you like. Ommm. (There’s a recipe in Taverna but also it’s very instinctive).
