Al pastor chicken tacos 🌮🌶️ This has been a staple meal in our family lately! Everyone loves it and it’s so flavorful and pretty simple to make. Ingredients For the chicken: 2 lbs boneless, skinless chicken thighs 1 small can of chipotles in adobo (use 2 peppers + 1 Tbsp sauce) ½ cup pineapple juice 2 cloves garlic ½ small onion, chopped 2 Tbsp white vinegar 1 Tbsp chili powder (or use ancho or guajillo if you have it) 1 tsp smoked paprika (optional but adds depth) 1 tsp cumin 1½ tsp salt 1 Tbsp brown sugar or honey Juice of 1 lime For Serving: Warm corn tortillas Chopped grilled pineapple Diced red onion Fresh cilantro Lime wedges Your favorite salsa (verde, pico de gallo, mango, or guacamole) Directions: Make the marinade: Blend chipotles, pineapple juice, garlic, onion, vinegar, spices, salt, sugar, and lime until smooth. Marinate the chicken: Coat the chicken thighs in the marinade and chill for at least 2 hours or overnight. Cook the chicken: Grill or sear over medium-high heat for 5–6 minutes per side until charred and cooked through. Rest 5 minutes, then slice.
