Replying to @justmck 🍎 RECIPE BELOW: Apple Cider Caramels Ingredients 1/2 gallon apple cider 1 cup (2 sticks) butter 2 cups heavy cream 800 grams granulated sugar 440 grams dark brown sugar 4 tsp ground cinnamon 2 tsp flaky sea salt Instructions 1. Line a 18x13in sheet pan with parchment on all sides. 2. Simmer cider until ~1 cup, thick and syrupy (about 50–80 min). 3. Off heat, stir in butter, cream, both sugars. 4. Return to medium-high and boil to 252°F, then pull from heat. Do not stir while boiling. 5. Off heat, fold in cinnamon and 2 tsp salt until smooth. 6. Pour into pan. Set until firm (room temp 2–4 h or chill ~1 h). 7. Sprinkle more flaky salt, cut, and wrap in wax paper. This recipe is a big batch!! Plenty to share with neighbors and friends. 🍎💚 Tip: Use a heavy bottom pot, 6-8 quarts. Start watching closely at 245°F, those last degrees go fast.
