okkk adding sweet potato to stuffed peppers 😮💨 Ingredients: - 1lb ground turkey - Bell peppers (I used 3 but had a lot of left over ground turkey mixture so 6 would be perfect! Great for meal prep 😉) - 1 sweet potato, chopped into small pieces - 1 onion, diced (chopper linked on amaz0n - 1 can black beans, rinsed & drained - Salsa @Fody Foods - Taco seasoning @Siete Foods - Cheese of choice (I used parm) - Toppings: Greek yogurt, pickled jalapeño, avocado, green onion & cilantro Instructions: 1. Season peppers with avo oil, salt & pep & pre bake until lightly brown (I broiled at 500 for approx 5 minutes) 2. Cook ground turkey, add sweet potato, onion, 1/4 cup water. Cover & cook until potato is soft and onion is translucent 3. Add black beans, a generous amount of salsa and taco seasoning. Cook for a few more minutes until mixture thickens 4. Add mixture to peppers, top with cheese and bake until cheese is melted 5. Add topping & enjoy!!
