They’re even fudgier after leaving them in the fridge a few hours! They’re packed with some optional protein, healthy fats, & fiber 🤍 Brownies: 1 cup almond flour 1/4 cup protein powder (or 1/2 cup more almond flour) 1/3 cup + 1 tbsp cacao powder 1/4 cup coconut sugar or monk fruit 3 tbsp maple syrup 1/4 cup almond butter (or sunflower for nut free) 1/4 cup mashed avocado 2 tbsp ground flax seed (you can probably omit) 2/3 cups plant milk 1 tsp vanilla + pinch sea salt 1/2 tsp baking soda Ganache: 1/2 cup full fat canned coconut milk (the solid part from the top of the can) 1 cup chocolate chips Pinch of sea salt Sprinkles Blend everything in a food processor. Spread into an 8x8 baking dish. Bake at 350f for 20-24 mins. Don’t over bake! I actually think the texture of these is best when left in the fridge for a bit! They get extra fudgy. Ganache: Add the coconut milk & chocolate to a microwave safe bowl. Heat in 20 second increments, stirring really well between each one until the chocolate is completely melted and thick. Spread over the brownies & top with sprinkles!
