Ingredients: 2 cups shredded coconut 1/4 cup maple syrup or sticky sweetener of choice 2 tbsp melted coconut oil 1/2 tsp vanilla (optional) + pinch of sea salt Coating: 1 cup chocolate chips add all ingredients besides the chocolate, to a food processor & blend a minute or two until the coconut breaks down a bit & everything’s combined. If the mixture doesn’t hold together between your fingers, add 1/2-1 tbsp of water at a time until it does. Press firmlyyy into your cookie scoop & drop onto a lined cookie sheet. Freeze for 20 or so, until they’ve formed up enough to dip. Melt the chocolate.
