Recipe: 3 cups shredded coconut flakes 3 tbsp coconut oil 1/4 cup maple syrup or sticky sweetener 1 tsp vanilla extract + pinch of sea salt 1 1/4 cups chocolate chips Almonds Add the coconut, sweetener, & coconut oil to a food process. Process for a few minutes until it’s well combined (scrape down the sides & blend again). I used a silicone mini muffin tin, but if using metal, I’d use liners! Press the mixture into the bottoms of a mini cupcake tin, about 2/3 full. Melt the chocolate & divide it amongst the bases. Top with an almond. Place in the freezer for a few hours until firm.
