I urge you to RUN to the kitchen and whip up these DELICIOUS Greek yogurt lemon bars made in partnership with @NewEnglandDairy. They’re incredibly easy to make, nutritious, and packed with extra protein from the Greek yogurt, one of my favorite sources of dairy. Dairy is so versatile, delicious, and nutritious. It can enhance just about any dish, including these sexy lemon bars. Each bite just screams summer. Not only does dairy enhance the recipes like this that we love to enjoy during later summer, but it’s also a truly local food. When you buy dairy foods such as cheese, yogurt, and real milk, you’re supporting farm families in New England.
Preheat the oven to 350 degrees and lightly grease a square baking dish. In a bowl, whisk together 1 cup all purpose flour, 1⁄3 cup melted butter or coconut oil, 1⁄4 cup maple syrup or granulated sugar, and a pinch of salt. Bake for 20 minutes then remove from the oven and let cool.
In another mixing bowl, whisk together 3 whole eggs, 1⁄2 cup plain Greek yogurt, 1⁄4 cup maple syrup, 1⁄3 cup lemon juice (the juice of about 2 lemons), 1⁄2 tbsp lemon zest, 2 tbsp all purpose flour, and 1⁄4 tsp salt. Pour this mixture on top of the cooled crust and bake for an additional 20 minutes or until the top has set. Let cool then cut and enjoy! I like to sprinkle mine with some powdered sugar :)
