Quinoa summer salad with strawberries, balsamic vinaigrette and pistachios 🌿 Quinoa is probably my favourite gluten free grain and the tri-colour one from @bobsredmill just looks so beautiful in this salad! Here's the recipe, it serves 2 ✨️ ➖️ Ingredients: - 0,5 cup @bobsredmill tri-color quinoa - 2 large handfuls mixed baby greens - 0,5 cucumber, shaved into ribbons - 2 tbsp @latourangelle balsamic vinaigrette - 1 avocado, cubed - 1 cup strawberries, quartered - 10-15 fresh mint leaves, chopped and/or whole - 0,25 cup @edenfoods roasted and salted pistachios - Salt, to taste ➖️ Method: - Combine quinoa and water in a pot, cover with a lid and bring to a boil. Reduce to a soft simmer for roughly 20 minutes or until the water has been absorbed entirely. Fluff it up using a fork. - Add quinoa, greens and cucumber to a mixing bowl and dress with the vinaigrette. Toss to coat. - Plate this up as a base for your salad and top with avocado, strawberries, mint and finish with pistachios. - Enjoy!
