SPICY SALMON SUSHI BITES- 2 cups sushi rice 2 cups water 1/4 cup white wine vinegar 1 tsp salt 1 tbsp sugar 1/2 lb salmon 2 scallions 1/2 cup mayo 2 tbsp sriracha 2 tbsp soy sauce 1 tbsp sesame oil 1/4 avocado sesame seeds- optional Seaweed For rice- rinse and drain sushi rice then soak in water for 20 minutes. Drain out that liquid and fill into a pot with 2 cups water. Bring to a boil then lower the heat all the way down. Cover for 15-20 minutes. Turn off heat and let sit with lid on for 10 minutes. Combine vinegar, salt, and sugar in a small sauce pot. bring to a simmer and once finished combine with your cooked sushi rice. mix well. Lay out plastic wrap on a small sheet tray. pat down rice and cover with more plastic. Place in fridge for a couple of hours. For spicy salmon- cube up sushi grade salmon and place in a bowl. add chopped scallions. In a separate bowl combine mayo, sriracha, sesame oil, and soy sauce. Mix well then combine with salmon + scallions. Place in the fridge if you’re not eating it right away. Once rice has been in the fridge for a couple of hours, take out and cut into bite size pieces. Place on a plate and top with seaweed to fit the rice. Follow with spicy salmon mix. Finish with avocado + sesame seeds & enjoy! Will make about 15-20 bites depending on how big your rice is! *If you aren’t using sushi grade salmon, you can use the same mix but bake at 350 for 10 minutes then top with that.
