Base: 1/2 cup oat flour 1/3 cup vanilla protein powder 1/4 cup maple syrup 1/4 cup cashew butter (can sub any nut or seed butter) 2-3 tbsp plant milk 1 tsp vanilla handful of cacao nibs or chocolate chips Filling: 1/4 cup vanilla coconut yogurt (or your fave yogurt) 2 tbsp cashew or almond butter 2-3 tbsp maple syrup Topping: 1 cup chocolate chips Mix together the base ingredients until dough forms. Taste & adjust as needed. Depending on the ingredients you use, you may need to add more flour or more milk. Stir in the chocolate chips or cacao nibs. Mix together the filling ingredients, adding more yogurt or maple as needed to reach the consistency shown in the video! Spread over the base. Pop in the freezer for 30 or so to firm up. Melt the chocolate, pour over the top. Freeze at least 2-3 hrs before cutting into bars!
