Long caption alert. One of my favourite recipes so far this year - mandarin cheesecake with strawberry Italian meringue topping, for a zero-waste menu I created for @jonesmagazine @davidjonesstore It takes the whole boiled citrus idea (made famous in Claudia Roden’s Middle Eastern orange and almond cake) and incorporates it in one of my favourite things - baked cheesecake. Topped with a strawberry Italian meringue and freeze-dried strawberry dust, with a salty-sweet biscuit base, this has almost all of my favourite things in one dessert!
