Chickpeas Salad Toasted Sandwich is on a steady rotation! This little big sandwich is GOOD GOOD GOOD!! Ingredients: 2 long slices of bread Enough vegan butter to butter 1 side of both bread slices 600g rinsed canned chickpeas 75g diced red bell peppers 15g diced spring onions 15g chopped fresh parsley 1/2 tsp chili flakes 1/2 tsp onion powder 1/4 tsp celery salt 1/4 tsp garlic powder 1/2 tsp salt 1/2 tsp black pepper 1 tbsp red wine vinegar 4 tbsp vegan mayo 1/2 tbsp virgin olive oil For garnish: Thinly sliced red onions Sliced tomatoes (I used heirloom tomatoes in this video) Method: In a large bowl crush the chickpeas with a fork then mix in all of the above ingredients except for the garnish and the vegan butter. Butter 1 side of both bread slices and toast the buttered side on a hot pan. Once toasted, spread a gracious amount of the chickpeas salad on the non toasted side of the bread. On the 2 slice you can spread a thin layer of the chickpeas salad.
