Behind the scenes, we infuse Lyre’s “Campari-like” Italian-style red bitter with melted cacao butter, then strain off the cooled solids. Then we sous-vide strawberries with lemon zest and sugar at a lower temp to create a quick and fruity oleo syrup. Then, we make a tea out of dried lemon verbena leaves and force-carbonate it with a touch of verjus. Lastly, we make a powder out of dried marigold flowers combined with sugar for a finishing garnish touch.
