Today’s mood is this Herbed Tomato Confit on everything from golden pan fried toast to creamy simmered grits to juicy grilled beef tenderloin to silky seared tofu. Recipe below. ⬇️ . Ingredients 1 1/2 pounds baby heirloom tomatoes 1/3 cup extra virgin olive oil 1/2 cup dark brown sugar 1 tablespoon apple cider vinegar 1/2 teaspoon fresh lemon juice 3 cloves garlic, smashed 4 sprigs rosemary 3 sprigs thyme 1 teaspoon kosher salt 1/4 teaspoon freshly ground black pepper Directions Preheat oven to 325F degrees 1. Toss all ingredients in a large bowl to coat, and then transfer to a quarter sheet pan in a single layer. 2. Roast 2 hours, tossing gently at the 45 and 90-minute marks. The tomatoes will be popping open as you toss and that’s perfect. Let their juices release and caramelize. 3. Cool down before serving (suggestions above).
