Summer bruschetta!! Bust out the chilled red wine and good olive oil, because here she is - the classic sort of 90s appetizer that made me feel so fancy as a middle schooler. It’s also so fun to say: BROO-SKETT-AHHH The ticket here is in the quality of ingredients, which I know is a very annoying, chef-y, thing to say but alas, it is true. If you have good ingredients, this is the easiest thing to put together and it tastes absolutely incredible. The magic is the weird tomato water left over. It is so full of flavor and wonderful, do not discard it. Add a shot of vodka and chill it for the best bloody Mary you’ve ever had, or add some chopped vegetables and turn it into a fabulous gazpacho.
