Sally Barnes' wild Atlantic smoked salmon- preserved in the traditional method using only salt and hardwood smoke- has been a special addition to our Christmas offering since the late 1980s. Sally works exclusively with wild fish in sustainable quantities from local boats off the coast of West Cork. Only when the weather is good and the fish is in season. We only receive a limited number of these special salmon each year due to tight fishing quotas and the decreasing population of salmon.
