200g Roasted Peppers - Jarred
100g Sun-Dried Tomatoes - Jarred
25g Nuts, (I Used Walnuts)
25g Breadcrumbs
1⁄2 Tsp Chilli Flakes
1 Tsp Cumin Ground
1⁄2 Lemon
50g Feta, Crumbled
50g Cheddar, Cubed
2 Tbsp Butter
2 Tbsp Honey
1 Tsp Chilli Flakes
1⁄2 Tsp Salt
10 Sheets Filo
Preheat the oven to 200C.
Blitz up the peppers, tomatoes, nuts, chili flakes, cumin and lemon to form a chunky paste.
Add this to a bowl and mix in the bread crumbs and cheese. Season with salt and pepper.
Lay out a sheet of filo and brush over generously vegetable oil, add two more layers brushing in between.
Slice the filo into three strips, at the end of each street add 1 tbsp of filling.
Fold one corner to form a triangle and continue folding the triangle upon itself, until the entire piece of filo is used.
Continue with the remaining filo to make triangles.
Brush with some more oil and place onto a wire rack or lined baking tray and cook for 15 mins or until golden and crisp.
Meanwhile, melt the butter, honey, chili flakes and salt in the microwave for 1 minute.
Brush the hot honey butter over the triangles and enjoy with your @tailscocktails!
