copycat mochinut (mochi donuts)
base:
1 3/4 cups sweet rice flour (mochiko)
1/2 cup room temperature milk
1/4 cup white sugar
1 1/2 tsp baking powder
1 room temperature egg
2 tbsp melted butter
***mix separate from the base
1/4 cup sweet rice flour + 3 tbsp room temperature milk (microwave for 30 seconds or until a sticky dough forms and set aside to cool).
mix dry ingredients and wet in separate bowl. sift dry into the wet mixture and add the dough that was set aside and knead for 1 minute. preheat oil to 350F. while oil is heating, add cooking spray to your hands (bc the dough is sticky to touch) and form 8 small dough balls (about 1 tsp each) and form a circle onto a piece of parchment paper. once oil is hot enough, add donuts into the oil (2 at a time is best). fry each side for about 1-2 minutes or until golden brown (remove the parchment paper after 20 seconds). set aside to cool on wire rack. once cool, add toppings!
ube glaze: 1/2 cup powdered sugar, 1 tbsp milk, 1/4 tsp ube extract
chocolate glaze: melted chocolate, 1-2 tbsp heavy cream
vanilla glaze: 1/2 cup powdered sugar, 1 tbsp milk, 1/4 tsp vanilla extract (topped with crushed oreos)
churro: 1 tsp granulated sugar, 1/4 tsp cinnamon
