Do not disturb, it's lasagne time! 😋⏰ This 'One-Pot Vegetable Lasagne' from @_naturally_peachy is so delicious, you won't even realise there's no meat in it! Serves: 4-6 people Ingredients: White Sauce: 🧈 60g butter 🌼 1/3 cup plain flour 🥛 4 1/2 cups milk 🧀 1 cup Parmesan cheese 🧂 Salt, pepper and nutmeg Lasagne: 🧄 1 tsp crushed garlic 🧅 1 large brown onion 🥒 1 medium zucchini 🍅 2tbs tomato purée 🎃 1/2 butternut pumpkin 🍄 Handful of button mushrooms 🍝 1 jar of pasta sauce 🤤 500ml stock 👌 8 lasagne sheets Method: 1. First of all, make your white sauce! Put your butter in the pot and it let simmer until melted. 2. Add in your flour and combine. Follow with slowly adding in your milk, but make sure you are stirring the pot as you add this in. Once this becomes a thick white sauce, take it off the heat. 3. Add in your cheese, salt, pepper and nutmeg. Now put to the side whilst you make the pasta sauce (okay you may actually need one pot AND a small bowl). 4. Now to make the pasta sauce! Pop your garlic, onion, tomato purée and a sprinkle of olive oil in the pot. Allow to simmer until onion is brown. Slice up your vegetables and add to the pot to cook them before adding in the pasta sauce and stock. Once all are combined now you can add in your lasagne sheets and the white sauce you made earlier. Put the lid of the pot and simmer until the pasta is cooked. 5. Sprinkle with Italian herbs over the top and some extra cheese! Enjoy!
