Morning Glory Cookies ☀️ recipe below ☀️ What are my two favorite things? Breakfast and cookies! So I am so excited to share one of my favorite on-the-go breakfasts. The perfect wake-me-up breakfast cookie. A quick breakfast that even my grandkids LOVE! It is a hardy meal that you can hold in the palm of your hand. Perfect for quick breakfast, after-school snack, or anytime. But...be careful, they go fast! ☀️Morning Glory Cookie Recipe ☀️(King Arthur Baking Company) 🍪Ingredients: 2 cups Whole Wheat Flour 1 tsp baking powder 1/2 tsp baking soda 1/2 tsp salt 2 1/2 tsp cinnamon 3/4 tsp ginger 1/2 cup coconut oil 4 tsp unsalted butter, softened 2/3 cup light brown sugar or dark brown sugar, packed 1/3 cup granulated sugar 2 large eggs 2 teaspoons vanilla 1 cup oats 1 1/2 cups carrots, peeled and grated 1/2 cup apple, peeled, cored, and grated 1/2 cup shredded unsweetened coconut 1/2 cup walnuts, chopped 1/2 cup raisins 🍪Instructions: Preheat the oven to 350°F. Lightly grease two baking sheets. In a small bowl, combine the flour, baking powder, baking soda, salt, cinnamon, and ginger. Set aside. In a separate large mixing bowl, beat together the coconut oil, butter, and sugars until pale and creamy. Add the eggs one at a time, beating until smooth and scraping the bottom and sides of the bowl after each one; then beat in the vanilla. Stir the dry ingredients (coconut, carrots, apples, walnuts, and raisins) into flour mixture until evenly incorporated. Using a 2" ice cream scoop, form dough balls onto the prepared baking sheets, spacing them about 2" apart. Bake the cookies for 13 to 15 minutes, until they're just set at the center. Remove the cookies from the oven and transfer them to a rack to cool. Store baked cookies in an airtight container for up to 2 days. Store in the freezer, wrapped airtight, for up to 1 month.
