Skipped on over to @farmersmarketla and picked up some skirt steak from @marcondasmeats and some fresh produce from @ricksproduce and Farm Boy Produce to make this Spicy Skirt Steak with Charred Nectarine, Scallion, and Cilantro Salsa. Hiiiiighly recommend making this for a simple, summertime dinner or for your next outdoor entertaining moment. Skirt steak is such an under appreciated cut IMO—you don’t have to do much to it to make it shine!! I cooked mine on the stove, but it would also be great on the grill! How fun is cooking in the summer?! #ad Spicy Skirt Steak with Charred Nectarine, Scallion, and Cilantro Salsa Serves: 4 1 pound skirt steak 2 teaspoons ground cumin 1/2 teaspoon cayenne pepper Kosher salt, to taste Freshly ground black pepper, to taste 6 tablespoons olive oil, divided 1 medium ripe nectarine, pitted and halved vertically 4 medium scallions 1/2 cup fresh cilantro, roughly chopped 1/2 cup finely chopped red onion 1/2 medium jalapeno, seeded and finely chopped 2 medium limes, juiced Cotija or feta cheese, crumbled, for serving (optional) Remove steak from the fridge 2 hours before you plan to cook it. Sprinkle both sides of steak with cumin, cayenne, salt and pepper, using your hands to rub the spices into the meat. Heat 2 tablespoons olive oil in a cast iron skillet over medium high heat. If using a grill, rub steak with 2 tablespoons of oil and preheat grill to medium high heat, greasing the grates as needed. Cook steak until charred on both sides and an internal thermometer measures 130 for medium rare, about 4 minutes per side. Remove from heat and rest on a cooling rack set over a sheet pan. Meanwhile, add nectarine halves and scallions to hot cast iron or grill and reduce heat to medium. Cook until scallions and nectarine are charred, 5 minutes. Remove to a cutting board. Trim scallion and thinly slice. Dice the nectarine. In a medium bowl, mix nectarine, scallion, cilantro, red onion, jalapeño, lime juice, and remaining 4 tablespoons oil. Season with salt and pepper to taste. Slice steak against the grain and transfer to a serving platter. Top with nectarine salsa and cheese (if using). Serve immediately.
