Today is the first day of #Kwanzaa and the principle of the day is #Umoja, which means unity. What I love most about celebrating Kwanzaa is the nightly gatherings with family and friends—and strangers who become family as we talk about the different principles that lay the foundation of life. It’s done with great food, laughter, crafts, song, and dance. I’m excited to come together with Chobani to bring our audiences together during this holiday over great food.
Creamy One Pot Mac & Cheez
🧀 Ingredients🧀
1 box corkscrew pasta
4-5 cups Chobani® Oatmilk Extra Creamy
6-8 tbsp vegan butter (you can use less but why would you 😉)
3⁄4 cup water
1 tbsp vegetable bouillon
1⁄2 tsp kosher salt
1⁄2 tsp smoked paprika
1 tbsp onion powder
1⁄2 tbsp garlic powder
1 tsp fresh-ground black pepper
1 tsp vegan Worcestershire
A few dashes hot sauce
1 tsp Dijon mustard
1⁄2 cup nutritional yeast
10 oz shredded vegan Parmesan
8 oz shredded vegan mozzarella
Seasoned toasted breadcrumbs (optional)
🍴Directions🍴
1️⃣Melt vegan butter in a medium pot over medium heat.
2️⃣Add in oatmilk, water, vegetable bouillon, and salt. Bring to a boil, add in pasta, and reduce to medium low. Stir occasionally to make sure it doesn’t stick.
3️⃣After 7 minutes, add in paprika, onion powder, garlic powder, and black pepper, and stir. Add in vegan Worcestershire, hot sauce, Dijon mustard, nutritional yeast, and vegan cheeses. Mix well and stir until melted, about 1 to 2 minutes.
4️⃣Top with toasted breadcrumbs if desired.
