Following his passion for efficient kitchen management principles, our Executive Chef Martin Göschel has brought new life into his cuisine by introducing the Zero-Waste philosophy. The team creates new, delicious meals for our four restaurants for those surplus products that would otherwise go to waste.
These dishes creatively raise awareness about food waste - the recipe of the Zero Waste Pizza uses left-over rye bread used for breakfast to make a crusty homemade pizza dough.
