AD Pão de queijo, but made with @comtecheeseuk. A stunning union in which two different ages of Comté are used, each bringing something different to the party - 24 month for depth & nuttiness and a 12 month for liveliness.
I adore Comté and these Brazilian cheese breads are a great if non-traditional vehicle for it. I also added a bit of thyme and while they're incredible on their own, I had a couple with a squidge of cranberry sauce - the sweetness against the earthiness is lovely. Try these and have them fresh from the oven when their texture is just perfect. Mmm.
PS I read a lot of recipes to make these and the result is a combination of all. But @marcello_tully's on @gbchefs was particularly helpful 🧀
