BAKED APPLE & RASPBERRY OATS INGREDIENTS 1/4 cup melted Organic Coconut Oil melted 3 cups Organic Rolled Oats 1/4 cup Organic Almond Meal 1 tsp baking powder 1 tsp Organic Cinnamon 1/2 tsp salt 2 eggs 2 1/4 cups oat milk 3 tbsp Organic Maple Syrup 1 large green apple, chopped 1 cup organic frozen raspberries, defrosted Garnish 1/4 cup Organic Almonds or Pistachios, chopped 1/4 cup Organic Sesame Seeds METHOD Equipment needed: 22cm springform pan Set the oven to 180C Add oats, almond flour, baking powder, cinnamon and salt to a medium bowl. Crack the eggs in a separate bowl, whisk them and then add the milk and whisk so to combine. Pour the wet mixture over the oats, stir around and let sit for a few minutes. Soften coconut oil. Pour half of it into the oats along with half of the maple syrup. Mix the rest of the maple syrup with the remaining coconut oil and toss the nuts and seeds in the oil and maple syrup. Grease a 22cm springform pan and spread the oatmeal evenly as a bottom layer. Add the chopped apple and defrosted raspberries on top. Finish by sprinkling the nuts and seeds evenly on top. Bake for 35 minutes. Tag us in your creations!
