Ingredients:

+ 1/4 cup Brussels sprouts, raw and sliced thin
+ 1 cup delicata and butternut squash, roasted

+ 1/2 cup quinoa (preferably red), cooked
+ 2 tbsp vinaigrette of choice
+ 1/4 cup cheddar cheese, sliced and broken into chunks
+ A few pickled onions (optional)
