Shrimp+grits+salsa macha Ingredients: As many shrimp as you wish 🍤 Grits: 1 cup quick grits 2 cups milk 2 cups water 4 tbsp butter Salt to taste Add milk, water, and a pinch of salt to a pot and bring to a simmer. Whisk in the quick grits and gently simmer stirring often for 15-20 minutes. Whisk in butter, taste and adjust your salt. Reserve Salsa macha: 3 guajillo 2 ancho 2 pasilla 4 cloves garlic 1/2 c peanuts 1/4 c sesame seeds 1 1/4 c sunflower oil. You can use olive oil if you enjoy the flavor it brings. 1 tbsp Mexican oregano Salt to taste Sherry vinegar to taste Method: Remove stems, seeds, and ribs from all dried chilis and place in a heat safe bowl. Peel and slice garlic, add to a pot with raw peanuts and sesame seeds. Cover with cold oil. Place onto the stove and on medium low heat gently fry until everything is light golden brown- tip: do not wait until it’s a deep golden brown because it will carry over and burn.- so once everything is light golden brown pour over the dried chilis. After a couple minutes add Mexican oregano. Once it’s cooled and the chilis are soft, add to a blender and pulse until everything is around the same size and still chunky. Add salt and vinegar to taste To assemble, squeeze a fat lime over your cooked shrimp and arrange on top of the grits.
